Determining if you're at Zenith is a start of turn effect. You choose in which order you apply your start of turn effects.
If a spell comes channeled from the discard, it is still counted as channeled so you will have to pay 1 Fire Mana.
The effect "activates" a channeled spell, so it will be discarded after it applies its effects.
